Farmers turned distillers, the folks at Woody Creek distillery in Colorado make a lovely potato vodka, crafted with Russet potatoes they grow themselves. Distillers who believe that a good vodka *should* have flavor, they only distill their vodka once, rather than stripping it down with multiple runs through the still.
